Ok so it’s really been a while! I know this year has been… well there really are no words for what it’s been- so here’s the quick to the point brief post to share this news and then in another blog post I can address this year and gluten-free life hacking!

So the news is our cookbook is on sale through the end of November for $.99!!! Seriously! 99 cents and you can have a gluten-free cookbook filled with hacks and tips for navigating gluten-free life and making delicious food with you wherever you go! The hard copy is also on sale if that’s your preferred cookbook style- and I can see the benefits of both!

Carrot Cake ( even gluten-free carrot cake)..should have carrot in it!!

Hi again!  I’ve loved getting to connect in person with many of you at the different shows, fairs and conventions we’ve been to over the last few months and online through comments, and email.  I was so thankful to get a particular email that came to us through our publisher, Harvest House. This email helped us realize that after all the edits and checks of the many drafts of our cookbook a last minute formatting change resulted in our Carrot Cake missing some vital ingredients and measurements..including the carrot!!! That just cannot stand! So I’m asking for help, I’m going to share the entirety of the recipe here, please share it. Share it widely!  I’m hoping we can find as many people that bought the cookbook as possible and get this correct version to them and give anyone else who may want to try out this great Gluten-Free recipe a chance to as well!

GF Life Hack #9

This hack is simple to do and can help make a world of difference in avoiding cross-contamination!

GF Life Hack #9 Label reading doesn’t just mean reading the manufacturers labels. Find fun ways to keep your food safe!

This hack has a little bit of a back story and will actually tie into another hack down the road. But for now let me say…

I am the only person in our house with Celiac Disease and while they all eat what I make gluten-free, there is gluten in my house for the rest of my family to enjoy without me. I’ll share more about how cohabitation of the two diets works for us in future posts. For the purpose of this hack I’ll share that there are two different jars of peanut butter in our house. One for me, and one for my husband and kids. (By the way added benefit of food allergies- you don’t have to share!) Usually our solution to keeping the two jars separate is to keep the gluten infested jar in the gluten cupboard and mine in my cupboard with the other gluten-free food. But a recent accidental mixup prompted my husband to write the following on their jar.

I love that after all this time we still can have a sense of humor and that he still works so hard to keep me safe from cross-contamination. The subsequent peanut butter lids have all had different variations of this same theme, but have been slightly different. It’s been fun to see and read the labels that are there to keep me healthy!

Find ways to label your food, but don’t be afraid to have fun with the situation and keep eating as joyful as possible.

Our COOKBOOK!!!!

Words can’t describe how excited I am to say that! Our cookbook is a real thing! After working on it for the past year it was so amazing to get to hold it my hands and see it become a reality! I did a short really silly video that shows my pure excitement the night I was given the book.

Top 5 GF Baking Tips

Here is a quick list of some baking tips I’ve learned throughout the last several years.

  1. First- give yourself some grace. Gluten free baking is tough- but not impossible. Don’t give up the first time something doesn’t turn out right- keep trying! 
  2. Don’t be afraid if GF baking batter looks more wet then you are used to.  I’ve learned that GF baking can dry out easily and so moist batter is almost essential to not have a dried out result.
  3. Stick to the recipe the first time you try a new GF dish. GF baking can be very tricky, and may have slightly different steps or ingredients then you are used to. Give yourself a baseline before you make changes so you can decide if you like the changes or if you like the original recipe.
  4. When using some of the wonderful boxed mixes that are available now add a teaspoon of vanilla to help it taste more homemade. (I picked that up from someone else. 😊)
  5. Spray muffin papers or muffin tins no matter how wet the batter is with a non-stick spray. GF baking tends to leave some of the baked goods behind in the tin or muffin papers- a perfect cupcake or muffin can come out if you spray it first.
